You want to use chkconfig to turn sendmail off. This will just turn off
the daemon which is used to receive mail - your mailer should still
launch a standalone copy of sendmail for outbound messages. You may
need to make sure, however, that your mailer is using a "direct"
delivery mode. Some mailers have a "deferred" mode which queues the
mail locally and then relies on the daemon to transfer it off to other
hosts.
