Why do people put all sorts of weird commands into their setups before they
have even got it working ?

defaultroute
pppd-options name linux
Is this your login name on the server you are dialing ?

pppd-options noauth
OK I don't use pppd-options SO, is it ok to have two entries OR should all
the pppd options follow just one pppd-options instruction ???? .... ie.
check this yourself, but if it was me I'd double check it.

connect "/usr/sbin/chat -f /etc/sysconfig/network-scripts/chat-ppp0"
include /usr/lib/diald/standard.filter
Why don't you get rid of these two just for the moment. Personally I never
like to play with default timeout settings until after I've set something
up OR I've tried ALL other options. Also I would put my pppd-options LAST,
LAST, LAST !!!!!!! ie. do not put diald options after pppd-options. It
appears your timeout isn't working anyhow (ie. diald says it's going to
redial in 30 in the log.).

redial-timeout 10
dial-fail-limit 15
debug 20

# /etc/ppp/pap-secrets
linux * my_password *

Feb 29 18:26:37 servidor pppd[25877]: Connect: ppp0 <--> /dev/ttyS0
Feb 29 18:27:11 servidor pppd[25877]: Connection terminated.

hmmm, 34 seconds. Do you think it might be timing out ??????
