tcpdump is an excellent tool for this purpose. You can set it
up to listen on any interface and, with appropriate options,
any port or ports you want.
It's listed on freshmeat.net if you need to know where to
find it.
Or, if you're using debian, it's a simple
apt-get install tcpdump
