You can upgrade the server to stretch, but you should make a backup of the nfsroot used for jessie installations. You can then have two nfsroots, one for the stretch one for the jessie installation. A jessie installation may also run from an stretch nfsroot, but it may cause some problems. So using the old nfsroot for your jessie installations is the best way to do it. And then build a new stretch nfsroot using the new FAI version for your stretch installations. P.S.: I'm always very interested in user experiences with FAI.
