i386 means the original Intel 80386  (you are unlikely to be using this)
i486 means the original Intel 80486
i586 means pentiums and AMD k6's I think
i686 means something beyond the original pentium - I think maybe supporting the MMX instructions. This is also supported by the AMD Athlon and later processors.

x86_64 means AMD64 processors, and the new AMD-compatible Intel processor ;-) (I forgot its number)

In general, each of the successive layers supports the previous instructions, etc.
