Since VMWare uses virtual switches, there should be no problems in having another virtual NIC with a virtual switch specifically for heartbeat purposes... If you will only be using 2 machines, you could use a virtual switch with the minimum number of ports (8, if I recall correctly), instead of the standard one (56 iirc).
