i have Sid installed with 3.1.4 and it works fine. I can only guess that the problem is with your locales settings. try "dpkg-reconfigure locales" and set to utf8 as system default. Also use culmus fonts "apt-get install culmus".
Sid is considered to be a developer-only distro and such problems may occure often.

I've managed to play around with the fonts and I discovered that the font I was using (Ann) probably doesn't have a UTF8 version, so it was displaying as gibberish.
Once I set the font to something else, it works fine.
