I am using HP PSC 2210 this is a multifunction printer that includes scanner, printer and a fax.
You can also use the other models that do not offer fax, they are much cheaper.
All are used through the HPOJ driver, I had no problems printing and scanning from this printer using Mandrake and Debian.
Only notice that you must have kernel 2.4.22 and above which is not a problem today.

Any suggestions about models supported fully by Linux (RedHat 8.0 and later)?

P.S.: My printer usage profile is:
- Low printing volume, mostly black&white
- Need color capabilities for the occassional picture
- Need to be able to photocopy once in few days, and this is significant part of my printer usage
