I'm also trying to achieve the same thing.

The Hauppauge WinTV series works great with Linux, yet-
it doesn't matter which TV provider you use (cables or sat),
since it gets connected using a coxial cable, which is outputted
from both cables' and satellite's convertors(memirim?:P).
(still trying to figure out where can I buy WinTV in Israel.)

Though, I'm looking at the direction of DVB - which can connect
directly to your satellite or cables output... I have no idea yet if it'll work
in
Israel, but it's an option (and a better one - it's digital, and if I'm not
mistaken (and I hope I'm not!)
it allows you to watch multiple channels simultanously
(that means, record something on channel A while watching channel B)

my default selection would be either debian or gentoo.
