Hebrew mail can be provided by any IMAP server (Courier, wu-imapd...). But, judging from you going to eGroupWare, I assume you also need the server to provide calendaring etc. It looks like eGroupWare isn't what you need, since Outlook cannot talk to it: "The next stable release from eGroupWare will include: workflow engine, contact center (replace the address book), new filemanager, support for MaxDB, calender extensions. Under development is also a MS Outlook plugin to connect Outlook to eGroupWare." The "Novell mail server" he wants to change is Novell GroupWise? If Novell GroupWise is really so misbehaving with Hebrew, you can look at the solutions listed at this page as "Other Solutions": http://www.slipstick.com/outlook/share.htm (I can say nothing about the problems those products may have with non-English text.
