I think I heard that GNOME (on Ubuntu?) has some "Kiosk" mode which should allow you to lock-down the configuration. Maybe you should consider using that. Another option might be to remove .gnome directory under their home directory to force GNOME to reset back to the defaults. I'm not an expert so better check around before you follow this advise.
