But you want to run a SIP client... make up your mind ;) MP3 players are a dime a dozen these days... it sounds like on the one hand you'd be happy with just any simple one and on the other hand you'd actually like a tablet/smart device. Cowon iAudio (or other cowon products) may fit your bill but they also approach iPod Touch in price, same goes for the Samsung Galaxy S Wifi (android device without cellular modems) and the same goes for tons of other "smarter" mp3-players, I'm pretty sure the two I named run some form of Linux though....
