Hi,

On setting up linux server, my advice is to take some experimental machine
and try installing. If you have a machine which is bootable from CD drive
then it's pretty straightforward.
One place to look for beginners (which I found useful) is the PCQuest
india's site. They have a section on linux in the site which gets a beginner
started.

Now to the DB question. This is too open ended to answer. It depends on your
requirement.
There are 2 DB's which are native to Linux, MySQL and Postgres. We've been
using postgres for quite sometime. It's a good DB provided you are not
planning to have a 24 by 7 uptime. It can serve most of client server apps
and lower end web applications.
BTW, DB2 and Oracle have some free version or other going on Linux. Visit
their sites to get more info,

One more thing to note. If you want to do anything at all with Linux, be
prepared to surf the net like mad. Ask forums like this questions
shamelessly (like I do). That's the only way to get going.
