Obviously there is a commandline (quake console) parameter for it. But
there is no config.cfg file if you don't run quake atleast once. Once
the config.cfg file is generated, you can look into it and check out
all the parameters.
I did all this because I didn't know the console parameter to set so
that you can turn off sound, and I didn't have a config.cfg file.
Since I've done the hard work, you don't need to bother with all this,
just do ./quake +set snddevice "/dev/null", or do what Shanu said:
./quake +set s_initsound 0
