look at /var/log/maillog - a log of all incoming and outgoing messages will be
there (set the logging level as high as you want). About the only thing you
ought not to log are the contents of the mails.
As for incoming mails, alias every address on your network to that address,
plus another [EMAIL PROTECTED] address.
