My 2 paisa from a newbie at setting up mail servers:
To get sendmail working (at least, I think I got it working) took me several
days and reference to several docs on the net. I got qmail working in one hour
after downloading the .tar. That too after only referring to the docs packaged
along with the source. Of course, as to how well it's going to work and about
complex configs I'll only know over the next several days.
