Take your pick. I prefer Exim or Postfix if you want ease of use. Sendmail
is also quite easy to use :) I didnt find qmail easy - lots of people find
it easy. So, I guess its a matter of taste.

solid pop3d - search freshmeat
cucipop is not bad too.
What pop / imap daemon you choose is more or less independent of your choice
of MTA.
