What kind of spam? If postfix is an open relay (which is very tough - it
defaults to a closed relay) then see the postfix FAQ about securing it.
If you want to _block_ spam, enable filtering against rbl / rss / dul lists
(see http://www.mail-abuse.org),maintain a blacklist of spammers, filter
mail according to regexps etc.
It's all documented in the postfix FAQ (which comes with the postfix source)
