Use anything you want. Sendmail comes by default on redhat, but there are
other, and perhaps easier) alternatives such as Exim (or maybe qmail and
postfix - which I personally don't prefer)
The FAQs are available at ... surprise, surprise ... the websites of each
MTA (sendmail.org, exim.org etc) :)

This is a good (and secure) combination as long as you keep updating Netware
(and upgrade Mercury to the latest version).
