mailserver = sendmail is out of the box in most linux distros. You can also try exim or postfix. Qmail is another high performance thing. Test them all out, see what you prefer. The best answer for your expectations would be to read the FAQs (and O'Reilly books) of whatever mail and DNS server you configure, then to search google for stuff. It is all a matter of personal taste, most of the time, for general use. At anywhere upto a few thousand users (and a few thousand huge zonefiles for popular domains), any mailserver, and any DNS server, will work quite well indeed.
