To boot in single user mode with GRUB you must edit the 'kernel command line'.
Press ESC to stop GRUB from booting, then press 'e' to go to the edit screen. Press 'c' (I think) to edit the command line after you higlight it (move the bar to the line you want to edit using the cursor keys). Modify the kernel command line to include the 'single' keyword. After editing it, press 'b' to boot with that option.
