Speaking as someone who's admining one such commercial mail service (several
thousand free email domains) I think you'll need a lot of stuff ...

1. High speed, redundant (and ideally multihomed) internet connections.

2. Clustered mail solutions of some kind (if only sets of linux or freebsd
boxes, with inbound pri and backup MXs, distributed mailstores stored in
netapp / maxtor filers / ordinary linux fileservers, etc)

3. Monitoring tools (like netsaint / sitescope)

4. Firewall and IDS stuff (if only a set of linux boxes with iptables rules)

oh, did I forget the last but not the least thing that comes to my mind --

5. A set of competent admins (and a largish staff of fairly ok NOC staff to
keep a 24x7 eye on the machines)
