That is a function of your mail client.  One other thing if you use a client 
like pine or mutt that tries to set the envelope sender by calling exim 
locally is that exim does not allow untrusted users to set the envelope 
sender.

Take a look at http://www.hserus.net/exim.html (For exim 3.x .. I will update 
it with the config required for exim 4.x as well, shortly).
