If the earlier installation is of mandrake then it would be an rpm and so you can 
remove it by doing a rpm uninstall using 
# rpm -e openldap(or whatever the package is)

There could be many problems due to which your ldap server may not be running.....
You would have to make a more careful diagnosis or else install from source following 
the instructions more carefully and the tests during installation really solve most of 
the problems...
