First of all, decide what you want to do. "Then convert the entire users in that server to Maildir using maildir2mbox" doesn't make much sense to me. Second, Run Courier IMAP (which also includes a POP server) on the second server as well. Third, users are different from mailboxes. You cannot convert users to Maildirs.
