in gnome 2.0 the default window manager is Metacity instead of sawfish.
the Preferences -> Themes lists only the gtk and metacity themes.
First of all you'll need to use sawfish as the default window manager.
If you've not done that already, first download relevant sawfish rpms
(don't know if redhat has them by default, mandrake does not), then
either in a terminal or the run dialog box, type "kill metacity;
sawfish". this will kill metacity and before metacity respawns, it'll
start sawfish.
however, you may need to do this till you don't have sawfish as the
default window manager because metacity might respawn before sawfish does.
after you're successful, then you'll need to change sawfish's
appearence, and it'll not be listed in Preferences -> Theme, it'll be
another link which will be installed by the rpm.
i'd recommend, instead of sawfish try working with metacity, it is real
good, though initially it might not work as good as sawfish, but perhaps
havoc pennington has this thing right of giving less options.
