it can be done using samba as a dc. but as said it won't provide the features of ad. 
as you just 
want the samba server to store profiles, might be this could help you... 
 
[Profiles] 
path=/path/to/profile 
browseable=no 
writeable=yes 
create mode=0600 
directory mode=0700 
 
you should also try enabling the netlogon on the samba server. 
and in the global section add, 
logon path = \\%L\Profiles\%U
