I would suggest you to build a custom system if possible. Compile the needed
packages instead of doing a rpm/deb based install. If you are not that familiar
with GNU/Linux systems, then you could go for a regular install too. Keep the
package count as per requirements only and you should do fine with any distro.
Use a lightweight desktop env like Fluxbox <http://fluxbox.sourceforge.net>.

Windows partitions are accessible from Linux but not vice versa!! RTFM for
"mount" & "fstab".
