Since you have been using RedHat, you should try another distribution
for learning about the differences. Personally, at this point, I like
Gentoo for the control it gives over the system and the ease of package
management. You could also try Debian unstable, or SuSE or Mandrake.

All Linux distributions will fit your criteria as stated.
