The documentation of most of the packages are installed under /usr/share/doc/<package-name-version> directory. Optionally, you can see the list of files in the installed package by doing a "rpm -ql <package>", and then see where the docs are installed.
JBoss is not shipped with RedHat 9 by default, to my knowledge. You can download it from www.jboss.org; it would have the documentation as well. Both pgSQL and cvs have good documentation in the above mentioned directory.
