Yes, you could do that (have 2 Apaches listen on different IPs on port
80), or you could have 2 instances of Apache listening on the same
IP(s) on different ports, or any combination.

Also check out the link that someone had posted about using mod_proxy
to achieve using both PHP4 and 5 on a single server.  That seemed to
be a more elegant solution.
