Please go ahead and use LVM. I works without any problems . We have global production systems running LMV on a single disk , on multiple disks, on raid arrays also on VMWARE ESX with LVM sizes ranging from 20 GB to 800 GB's and they have worked without any problems . We are using RHEL3 AS, RHEL4 AS servers . Resizing the file systems in the logical volumes, resizing the logical volumes, resizing volume groups (mostly increasing but occasional reducing too) has given us no problems so far ( almost 3 years now).
