I suppose you mean redhat 6.1? Anyway, I think what you want is a
mailserver with a GUI control panel (like exchange / lotus notes has).
Both sendmail and qmail have fairly good web based control panels for
general use (adding users / relay domains, etc). However, for some
advanced things (like recompiling sendmail.cf after adding a feature) you
have to edit the file - no GUI for that :)
Sendmail control panel comes as part of webmin - and as it is
installed by default on yr box, it will require minimal, if any,
tweaking to run on your box.
If you want qmail - there's a full fledged control panel for qmail -
search freshmeat.net.
