If you have enabled ExtendedStatus, you can look at
http://yourhost/server-status. It will list the pids of the servers, and
what their last request was, among other info. 'top' will tell you which
pid is taking up the cpu (server-status might tell you too).
You can use 'strace -ppid' to look at the system calls that pid is making.
That's as close to "what it is doing" I can think ok.
