Newbie question on closing ports.

Hi,

How do I close a port? Like the telnet port or the anonymous ftp port? I 
know this sounds very vague, but if anyone could point out any page out 
there where I can get the information, it would be very much 
appreciated. By the way, I'm using RedHat 5.0.
