There is a Mail-HOWTO.  This will give you an idea about how to setup
sendmail or another SMTP daemon.  However, what distribution are you using?
I know that the slackware distribution comes with sendmail already
configured to send SMTP messages.  As for a mail client, most distributions
(at least that I know) come with Pine, Elm, and mail.  These are some fairly
simple to use email clients.  I would still read the Mail-HOWTO.  It will
give you a greater background on the Linux mail systems.
