  Sounds like you have a few great ideas, I've worked as a teacher assistant
at the University of Toronto, and Linux was an amazing platform to teach
various skills.  I think with kids you could have a lot more fun with
e-mail, maybe web design while teaching them some Unix basics.
  Here in North America, Linux is often laughed at by Microsoft enthusiasts,
they just don't realize that the world is not all plugged into MS Windows.
It's growing here in Canada, as it offers an inexpensive means of
networking, web serving, you name it..  Just make sure with kids that you
keep it fun, I haven't had the opportunity to teach younger kids much, but I
know that you have to keep things fun for kids to apply any interest.
