The Firewall HowTo (http://metalab.unc.edu/LDP/HOWTO/Firewall-HOWTO.html)
discusses proxy servers as well -- mainly from the server side of things,
but with some info on the client side as well. I haven't done this myself,
and the info in this HowTo looks well short of what's needed to get it
working. On the other hand, it includes references to more detailed
instructions on the specific packages it describes. So it should at least
serve to get you started.
