O'Reilly used to publish Programming With Curses, by John Strang. This was
enough to get me going with ncurses, but I don't know if it's still in print.

ncurses isn't really a GUI, thought ... it just provides full-screen control
for text windowing. If you don't use X and want a GUI, you're stuck using a
hardware-dependant app or library that I can't remember the name of right
now (anyone?).
