        Several different ways.  If I'm doing it from within a shell script,
my preferred way is to form a message including headers and pipe it to
sendmail.

        Ex:  (The -t on sendmail say to get names from the headers)

/usr/sbin/sendmail -t << EOM
To: [EMAIL PROTECTED]
Subject: Who knows
From: [EMAIL PROTECTED]
Organization: What organization...

Message

EOM

        If you want to do it interactively, just use "mail".
