You can. Add this to the stop portion of
/etc/init.d/{firewall,network,whatever}, just before the eth0 gets
destroyed (ifconfig eth0 down).
# (date; echo "--------------------"; ipchains -L -n -v) >> \ 
/var/log/ipchains

You can the write a little perl script that you can ask to sum all
amount and make some nice pictures for you :-)
