Could it be that it is your terminal type that is showing the junk chars.?
On a color_xterm the above command does not show any junk chars.

maybe the following will help, or give you ideas on howto read man pages in
other formats.

zcat /usr/man/man1/ls.1.gz | groff -Tascii > file
