In /etc/xen/xend-config.sxp I replaced bridge=<name >
with a name of mine.
What more should I do to have the default bridge renamed to a name I choose

 (network-script 'network-bridge bridge=tapas')

# scenarios, such as having two outgoing interfaces, with two bridges, and
# two fake interfaces per guest domain.  To do things like this, write
