please read the redhat manual.
if you boot the installation in graphical mode
and you partition your disk manually with diskdruid
you can assign them a partition type of 'linux raid'
then click on the 'create raid device' button
then assign it to an ext2 fs mounted on /
then watch :)))
only caveat: seems that the redhat 7.1 installer wants to create
/boot only on the two first disks (or its idea of the two first disks)
