This is probably one for a FAQ.
The 2.1 series of kernels are never stable. They are developers
kernels. You should expect them to crash. In reality they often
don't. I'm currently using smp 2.1.125 and it's trouble free.

Unless you are actually a kernel hacker, you help the evolution
process by running the latest kernel and reporting problems to those
who can fix them. If this is too much trouble, you probably should use 
a 2.0 kernel. The only exception to this is that smp apparently works
better on 2.1 so it attracts some people who would stick to 2.0
otherwise.
