I've investigated both the issue and the code, and thanks to the help
of LDD3 Ch13 (currently online at oreilly.com, btw), I now have a
better understanding of how that (doesn't) work :)
(kudos to Greg KH btw, I guess that chapter is his work)
So the error messages I already mentioned in the previous mail show a
timeout on Endpoint 2 IN, which is a BULK endpoint:

On rare occasions, error -71 (-EPROTO) shows up for the same endpoint
(ie: the only thing that changes in the logmessage is the error
value), which seems coherent with the timeout issue ("-EPROTO:
bitstuff error during the transfer or No response packet was received
in time by the hardware").
AFAICT, I have no problem with CONTROL and INTERRUPT endpoints (device
configuration works fine, mouse devices work fine).
I've also tested with a mass storage device, which has only BULK
endpoints btw (ep1out and ep2in, ep2in has the same descriptor as the
bluetooth device) and it works smoothly with very nice performance.
OTOH, any BT HCI dongle I'd try would fail the exact same way...
Now my question is fairly simple:
What are the likely causes of such a behaviour?
Is it possible that this symptom is the consequence of a bug in the
HCI USB layer, and not an actual OHCI bug?
Could it be a hardware bug?
FWIW, when the timeout happens, the stack looks like this:

I would really like to fix that bug if that's possible, but I must
confess my lack of insight when it comes to OHCI and BT HCI... If
