you should always insist that people bring their own monitor,
because what works with a provided monitor may not work
with the one people have at home, 
most likely people will not know how to configure the monitor,
(if they knew why would they come to an installfest (ok there are 
exceptions where someone has linux already running and wants to solve
a specific problem)

the general advice i see given for installfests is,
to bring everything! you want to get runnin with linux,
your soundbox, your scanner, your coffeemachine, your cat...
