As root:

change to the OpenOffice install directory then type

 ./setup /net

(Note: ./  ([Dot][Slash] is important )

This will allow you to change the Install directory and does a "Network" 
install which means there is only one copy of the program files for all users 
to access.

Somewhere like /opt/OpenOffice is a possible place to put it.

Then login as the user you want to install OpenOffice for,
using a terminal or file manager switch to the directory you installed it to 
then run the setup program and select the network install option (Aprox 3MB) 

e.g in a terminal type 

 /opt/OpenOffice/setup 

Or using a GUI file manager you should be able to change to that directory and 
click/double click on setup.
