I have at long last discovered what was missing from my Knoppix installation that stopped Evolution's attachments being displayed. The missing package is:
gnome-icon-theme Only took me 8 months. Vik :v) -- This PC runs Linux. If you find a virus apparently from me, it has forged the e-mail headers on someone else's machine. Please do not notify me when this occurs. Thanks.
