I am doing all that in gentoo.

you don't want to burden yourself with a gui, so get used to the command
line, or webmin and/or swat (the latter for samba).

many people pick debian stable for a server, and thats a good choice too.

mandrake will, of course, do it all, but it will want to install X,
which you can cancel I guess.
